From recommendation to plate: who is responsible for mealtime safety?

Why IDDSI knowledge needs to extend across the whole team

In our previous article, we explored the pressure catering teams can carry when supporting texture-modified diets, IDDSI requirements and mealtime safety in aged care and disability support settings.

But catering teams should not have to carry this pressure alone.

Mealtime safety works best when the whole team shares a clear understanding of what is needed, why it matters and how recommendations are applied in everyday practice. A Speech Pathologist may recommend texture-modified foods and drinks. A catering team may prepare the meal. A care worker may serve it. A nurse may monitor changes. A manager may be responsible for documentation, training and compliance.

Confusion happens when these roles are not connected. The speech pathologist’s recommendation may not reach the plate. A meal may be prepared correctly but served incorrectly. Staff may be unsure what an IDDSI level means, how to recognise a concern or when to ask for support.

This is why training matters across the whole team!

Swallowing & Dysphagia Support has launched an online dysphagia and IDDSI training course designed for aged care and disability teams. The course supports staff to understand dysphagia, IDDSI food and drink levels, safer mealtime support strategies and when to escalate swallowing concerns.

The training is designed to be practical, accessible and relevant to everyday care environments, helping teams build shared language and confidence across catering, care, support and clinical roles.

In a care setting, mealtime safety is not one person’s responsibility. It takes a team! And that team needs clear, practical training.

Online dysphagia support and IDDSI training is now available.
Individual and team enrolments are available through Swallowing & Dysphagia Support.
